Basic Biscuit Mix Ingredients: 8 cups all purpose flour 8 tsp granulated sugar 2 tsp salt 1/3 cup baking powder 2 tsp cream of tarter 1 cup powdered dry milk 1 ¾ cup shortening Instructions: Stir the dry ingredients together, mixing well. Cut in shortening. Pack mixture loosely into an airtight container. You may omit the powdered dry milk from the mix if you prefer to use sweet milk instead of the water. To make biscuits: Add 1 cup of mix to 1/3 cup water. Roll out to desired thickness and cut into desired shapes. Bake at 450o for 10 – 12 minutes. To make pizza: 1 pkg dry yeast (1 Tbsp loose) ¾ cup warm water 2 ½ cups Basic Biscuit Mix Dissolve the yeast in the water. Add the biscuit mix and mix well. Knead the dough; roll out to desired pan size. Let rise on a well greased pizza pan for 30 minutes. For Pizza Topping: 1 pound ground beef, cooked ¾ cup onions, chopped Salt & pepper to taste 2 cups tomato sauce Other toppings to taste Cook the ground beef, onion and pepper together until vegetables are translucent. Drain off grease through a sieve and rinse under hot running water. Spread meat mixture over raw dough. Add other toppings as desired. Cover all with Mozzarella cheese and bake at 450o until done ~ about 30 minutes. For Cherry Pudding: 3 cups Basic Biscuit Mix 9 Tbsp butter or margarine 1 ½ cups milk 1 tsp vanilla extract 3 cups pitted cherries 1 ½ cups water ¼ cup granulated sugar 2 Tbsp all purpose flour Work Biscuit Mix with fat as you would for a pie crust. Add the milk and vanilla. Stir this mixture with a fork until a soft dough is formed. Boil the remaining ingredients together. Pour this mixture into 9 x 13 inch pan. Roll the dough into shape and place over the hot mixture in the pan. Bake at 350o for about 1 hour or until done. Serve hot with milk. NOTE: Other fruits may be substituted for cherries as desired. For Quick Custard Pie: ½ cup Basic Biscuit Mis 4 eggs, separated 1/3 cup granulated sugar 2 cups milk 3 Tbsp butter or margarine 1 tsp vanilla extract Beat the egg whites until they are stiff, then add the remaining ingredients. Beat the mixture well. Pour int a buttered pie pan and bake at 400o for 25 – 30 minutes, until the pie is golden brown. The mixture will form its own crust. Variation: Coconut Cream Pie: Add ½ cup coconut to the mix.
