Basic Gujarati Lemon (or tiny mandarin oranges) Pickle: 1 kg Lemons ( or the tiny mandarin oranges) 1/2 kg Sugar l teaspoon asafoetida 4 teaspoons Red chili pepper 2 teaspoons Turmeric 1/2 cup Salt Quarter the lemons or oranges nearly to the bottom but do not cut through Mix the salt and turmeric powder thoroughly Stuff the lemons or oranges equally with the salt and turmeric mixture and put in an airtight jar for one month. Shake the jar thoroughly twice a day The lemons or oranges will start releasing its own juice. At the end of a month, open the jar and drain it(but retain the juices) and cut each lemons or orange into four pieces In the juice mix asafoetida powder, red chili powder and sugar Put the lemons or oranges back in the jar and pour the juice mixture on it. If you like to add more flavour and zing to this pickle, you can add julienned pieces of 250 gms of fresh turmeric, julienned 250 gms of ginger and 50 gms of chopped (1/8”) of fresh green chillies Store the jar in a cool place out of direct sunlight. Always use a dry and clean spoon when you remove the pickle from the jar if you don’t want it to spoil. Never put the pickle you have taken out back in the large jar Ruchi Airen
