Bombay sandwich chutney /Green chutney/ chaat chutney ..Kuch bhi keh lo..so versatile .. If u have this prepared before hand.. U can make so many dishes to go with it.. Just a quick paratha, sandwich , chaat, Frankie ,patty/ tikkiS, dosas, add it while cooking veggies for the extra zing, savory pancakes, idli, dhoklas, handvo and so much more.. A must have in your fridge. I make a large batch .. Freeze in small containers and always keep one in the fridge. There are so many ways to prepare .. I am sharing my way. I work with ratios while making this So its 2:1 cilantro : mint So if I take 4 cups cilantro ( use the leaves as well as some tender stems) 2 cups fresh mint ( use leaves) 10 -12green chillies Approx 3 long ginger Salt 1 tsp sugar 1 cup dalia ( this binds the chutney so well) Fresh lemon squeezed Method Grind the dalia to fine powder. Set aside Grind ginger , chillies, salt, some water, lemon to a paste Add washed cilantro mint some water to above and grind to a puree consistency Then add the powdered dalia to it.. Grind to a thick paste .. Taste and adjust the salt or lemon. U are done Store in small containers .. One in the fridge and rest in the freezer.. When using freezer chutney just defrost it for a minute or two . Mine doesnt last long :)
