Boost your smoothie flavor and benefits with Lemon Rind: I wash my lemons really well when I get them, juice them and freeze the juice in ice cube trays to keep on hand for recipes. I then take the rinds and…nope don’t throw them away! Cut them in 8 pieces and throw in a freezer bag as well. Toss one piece into your green smoothie each day for added flavor and benefits. With its potent flavonoids, lemon peel has been linked by research to preventing and killing cancers. I suggest blending your greens and lemon rind first and then add your fruit to be certain it gets blended completely. As you continue to increase the amount of greens and decrease the fruits, the lemon really helps to off set the strong flavor of the greens. I also use my lemon rinds for double fermentation when making kefir. Thats a post for another day...;)
