The fat content of our gelato is therefore the same as a glass of milk between 6 to 8 %. Ice Cream (by Federal Law) must contain at least 10% Fat. The law also stipulates that a gallon must weigh at least 4.5 pounds. This is to insure that the manufacturer does not put excessive amounts of air in the ice cream and that you as the consumer gets some value for the money you spend on Ice Cream.
