Butternut Squash Soup *1 tablespoon olive oil *1 cup chopped white or yellow onion *1 medium apple- peeled, cored, seeded, cut into chunks *4cups vegetable broth *2 1/2 lbs Butternut squash, peeled, seeded, cut into chunks *1 tablespoon curry powder *1 cinnamon stick or pinch of ground cinnamon *3/4 cup unsweetened coconut milk (optional) *salt to taste *fresh ground pepper +Cook onion and Apple in a pot in olive oil over medium heat until browned +Add all ingredients except for the coconut milk, salt, and pepper. +Cover the pot and simmer mix for 20-25 mins until squash is tender. +Remove from heat, throw away cinnamon stick, cool for atleast 30 mins until cool enough to blend. +Add batches of squash mixture to blender and puree +When ready to serve, return blended soup to pot, add coconut milk, and heat until hot.
