CHEESE PUDDING Mary Margaret McBride Encyclopedia of Cooking 1 ½ cups milk 2 ½ cubed stale bread 1 ½ cups coarsely grated cheese 1 ½ Tbsp butter or margarine ¾ tsp salt ½ tsp pepper Pinch of nutmeg 3 eggs, separated Combine milk, cheese, butter and seasonings; cook over low heat until cheese is melted. Remove from heat. Blend in egg yolks that have been beaten until lemon colored. Then fold in egg whites that have been beaten until stiff but not dry. Pour into a 2 quart buttered baking dish. Bake 350 degrees 30 to 35 minutes. Serves 6
