CHeatcut chicken and dumplings: sweat some chopped onion and celery in about a tablespoon of butter in a large stockpot or dutch oven. Add two cups chicken (i buy rotiserrie chicken from the deli and shred it up) three cups chicken stock, one can cream of chicken soup, one can cream of celery soup, two bay leaves, some fresh thyme and plenty of black pepper and bring to a boil. Turn down heat and simmer for twenty minutes. Take a can of biscuits and separate into eight biscuits. Cut the eight into halfs ans drop the biscuits into pot. Cook only til they all float to the top. Remove bay leaves before serving.
