CURRY CHICKEN INGREDIENTS: 2lbs chicken breast 2 stalks escallion 1 scotch bonnet pepper 1 small onion/half big 1/2 sweet pepper(combination of the three colours) 1 big sprig thyme 4 cloves garlic 1tbsp.all purpose seasoning 1tbsp. chicken seasoning 1 tbsp. curry powder 1tbsp. jerk seasoning irish potato carrot METHOD: Remove the skin from chicken and was with vinegar ADD all powder seasoning and curry ADD all chopped ground seasoning like onion, sweet pepper etc. USE RUBBING METHOD TO COMBINE ALL OF THE INGREDIENTS TOGETHER WITH THE CHICKEN. (mix all seasoning with the chicken using hands so that the chicken can absorb the flavours of the seasoning). THERE are two methods to curry your chicken either putting the curry on the chicken or burning the curry in your cooking oil. Heat the oil in a frying pan and stir fry your chicken and seasoning for 3 mins then add small portion of water to your chicken until tender then add you cubed potatoes and carrots and reduce heat allow to simmer or until gravy is consistently thick.
