Carrot Cake 4 eggs 2 cups sugar 1 1/2 cup oil 3 grated carrots 2 cups flour 1 tsp salt 2 tsp baking powder 2 tsp cinnamon Preheat oven to 350. Cream eggs, sugar,and oil. Mix dry ingredients together and add to egg mixture. Mix well. Add carrots and mix well. Bake in 3 greased and floured pans. 25 to 30 min. Frost with cream cheese frosting. Note: I think some recipes call for chopped pecans in the cake. I only put in frosting and decorate top of cake with pecan halves. This is my brothers favorite cake and I bake it every Thanksgiving when everyone meets at our home.;)
