Carrot Cake Jam 1 can (20 oz) unsweetened crushed pineapple, dont drain! 1 1/2 c. shredded carrots 1 1/2 c. chopped peeled ripe pears 3 Tbs. lemon juice 1 t. ground cinnamon 1/4 t. ground cloves 1/4 t. ground nutmeg 1 package (1 3/4 oz.) powdered fruit pectin 6 1/2 c. sugar In a large saucepan, combine first 7 ingredients. Bring to boil. Reduce heat; cover and simmer for 15-20 minutes or until pears are tender, stirring occasionally. Remove from heat; stir in pectin. Bring to a full rolling boil over high heat, stirring constantly. Stir in sugar; return to a full rolling boil. Boil for 1 minute, stirring constantly. Remove from the heat; skim off foam. Ladle into sterilized half pint jars, leaving 1/4 in headspace. Remove air bubbles; wipe lids. Process in a water bath for 5 minutes. Makes 8 - 1/2 pints
