Cauliflower Crust Pizza Recipe: Yield: 2 Servings Per 1/2 Pizza: 290 Calories, 9g Fat, 3g Saturated Fat, 158mg Cholesterol, 986mg Sodium, 25g Carbohydrate, 8g Fiber, 34g Protein. Crust Ingredients: 1 Head Cauliflower (4 Cups grated) 1/4 tsp Salt 1/2 tsp Basil 1/2 tsp Oregano 1/2 tsp Garlic Powder 1/4 Cup (1 oz) TJs Low Fat Shredded Mozzarella 1 Whole Egg 1 Tbsp Egg White Topping Ingredients: 1/8 Cup Pizza Sauce 1/4 Cup (1 oz) TJs Low Fat Shredded Mozzarella 1 Cup Baby Spinach, wilted 5 Cloves Garlic, cooked in a lightly oiled pan 4 Medium sliced Portabellas, cooked in a slightly oiled pan 2 Tbsp Sun-dried Tomatoes (no oil) 5 oz Cooked Chicken Beast, diced 2 Tbsp (1 oz) TJs Low Fat Creamy Goat Cheese Instructions: 1. Preheat a pizza stone in the oven at 450 degrees F. 2. Place parchment paper over a cutting board (to transfer crust onto the pizza stone later) and spray with nonstick cooking oil. 3. Wash cauliflower, remove leaves and most of the stems (you just need the florets off of it; not much stem). 4. Place florets in a food processor and pulse until it looks like powdery snow. 5. Transfer processed cauliflower to a bowl and cover with plastic wrap, then microwave for 4 minutes. 6. Dump the cauliflower crumbs into a clean tea towel (I used a dish towel) and let cool for a few minutes before ringing it out. It is KEY that you squeeze out as much water as possible so the crust doesnt fall apart! 7. Return cauliflower to a dry bowl, then add salt, basil, organ, garlic powder, Mozzarella, and egg, then mix by hand. 8. Place the dough on the prepared parchment paper and shape it into a crust with your hands. I made mine about 3/8th-inch thick. 9. Carefully slide the parchment paper off of the cutting board onto the hot pizza stone in the oven. 10. Bake for 8-11 minutes until it turns slightly golden brown and remove from the oven. Toppings: 1. Spread the sauce across the finished crust and sprinkle with the rest of the shredded mozzarella. 2. Layer with toppings: Spinach, Garlic Cloves (sliced), mushrooms, sun-dried tomatoes, chicken, and dollops of goat cheese. 3. Slide the pizza back onto the pizza stone and bake for another 5-7 minutes until the cheese melts. Enjoy!
