Cauliflower Pie – with grated potato crust Crust 2 cups grated packed raw potatoes ½ Teaspoon salt, 1 egg beaten, ¼ cup grated onion Set the freshly grated potato in a colander over a bowl. Salt it and leave for 10 min. Then squeeze out the excess water and add the remaining ingredients. Bake for 40 to 45 mins on 400 F Filling 1 heaping, packed cup of Cheddar or Monterrey Jack 1 medium cauliflower, broken up 1 medium clove crushed garlic 1 cup chopped onion 3 tbsp. Of butter or margarine ½ tsp of each Basil & Salt 2 eggs, ¼ cup of milk, beaten together Black Pepper, Paprika Sauté the onions and garlic, lightly salted in butter for 5 min. Add herbs and cauliflower and cook covered for 10 min., stirring occasionally. Spread half of the cheese into the baked crust; add the sautéed ingredients, then the rest of the cheese. Pour the custard over and dust with paprika. Bake Turn oven down to 375 and bake for 35-40 min. until set.
