Cheaty Zucchini Low Carb Lasagna! Lasagna doesn’t have to be a no-no when you’re on a diet. Just a few easy subs and you’re good to go! This was so good, my husband and daughter loved it, and honestly, it tasted and felt pretty much like normal lasagna! What you Need: 2 long zucchinis 1 jar pasta sauce 1 container of low fat ricotta cheese about a half a cup of low fat shredded cheese 1lb of extra lean ground beef Herbs What you need to do: 1.Slice the zucchini very thin the long way, to make “noodles". We used those long holes on the cheese grater and it worked PERFECTLY! 2.Lay the “noodles" out flat on a baking sheet and broil for a couple of minutes on each side. This will help your lasagna from being too watery after it’s baked. 3.Brown the beef, and drain/rinse off excess oil. Add the spaghetti sauce. Set aside. 4.In a little bowl, mix ricotta with herbs of your choice, such as fresh oregano, basil, or Italian herbs. 5.In a lasagna pan, spread half of the beef mixture. On top of that, spread half of the ricotta mixture, using a spatula. 6.Now, lay down the noodles long ways across the pan, and then opposite way to make a crisscross pattern. (Use half of the noodles) 7.Repeat the beef-ricotta-noodle steps. 8.Sprinkle with cheese! 9.Put in the oven at about 375 for 45 minutes. 10.EAT AND ENJOY THIS YUMMY SUPPER!
