Chicken with Spaghetti and Summer Squash You will need the following: 6 ozs spaghetti 2 tsp olive oil 3 cloves of garlic, minced 1 lb skinless, boneless chicken breasts, cut into 1 inch chunks 10 ounces yellow summer squash, halved lengthwise and cut into 1/2 in thick pieces 1 red bell pepper, cut into 1/2 in chunks 3/4 tsp dried sage, 1 and 1/2 cups diced plum tomatoes 1 tbsp. red wine vinegar 1/2 tsp salt 2 tbsp. grated Parmesan cheese In a large pot of boiling water, cook pasta until just tender, drain. Meanwhile, in a large nonstick skillet, heat the oil on low, add the garlic and cook, increase the heat to med add the chicken and cook stirring occasionally until the chicken is lightly browned, add the squash, bell pepper, sage and cook stirring frequently, until the veggies begin to soften, add the tomatoes, vinegar, and salt and cook until the chicken is cooked thru and the veggies are tender. Place pasta on 4 plates and spoon the chicken and veggies on top. Sprinkle with Parmesan and serve, um um good. "From My Kitchen to Yours" enjoy!
