Chilean Squash Casserole!!!! Adapted from Molly Katzens Moosewood 4 cups cooked, mashed butternut squash 4 eggs, beaten 1 cup chopped onion 1&1/2 cup chopped peppers (using jalapeño if you want to add heat) 2 cups fresh corn 1 cup (at least) grated sharp cheddar cheese 2 Tbs chopped garlic 2 Tbs olive oil tsp. salt tsp. ground cumin tsp. ground coriander 1/2 tsp. chili powder dash of cayenne, black pepper Sauté onions, garlic and spices in oil until clear. Add peppers and salt, cook until slightly tender. Add to squash with corn and eggs and mix well. Spread in a greased baking dish and cover with cheese. Bake at 350F for 20 minutes covered and then 15 minutes uncovered. Serves 4-6. Enjoy!!
