Ching ching chow chow 😆 Friday night ! Chinese night! Chowmein noodles and paneer chili for tonight...Hmmm yummy The recipe is already posted please scroll down. Chowmein recipe credit goes to my dear friend on CAL Shivi choudhary thank u Shivi. The paneer chilli Chinese was prepared using this you tube link. Enjoy everyone.. Chowmein -Put a small cup of soya granules in a bowl, soak them in water and put in the microwave for 3-5 mins. Strain and squeeze all the water. Fork them and Keep aside. -Take a large pot, fill it with water. Add 2 large spoons of oil to it and put it on high flame to boil. Once water starts boiling, add the pack of noodles, stir n separate them gently. Cook till they are 80-90% done. Keep watching. If they get soggy, its all over ! Strain and immediately soak them in cold water. Strain again. Smear some oil on the noodles so that they dont stick to each other. Spread them on a flat try. - Heat some oil in a large wok. - Add sliced onions, stir fry for a few seconds only. -Add thinly sliced carrots, capsicums, cabbage. Stir fry on medium to high flame for around 30 seconds, making sure they dont get soggy either. Finally add the soya granules. Stir well. - Lower the flame. Now from here its all about estimation, just like how a Chinese van guy does add dark soya sauce, chilli garlic sauce, vinegar (I use Heinz) and chings schezuan chutney. Do a finger lick test. See if more needs to be added. Always add little by little. Better to be safe than sorry, simply because we are not a pro at this. Also, go very slow on vinegar. There is a very thin line between getting it just right and spoiling the whole taste with the pungent flavours of these sauces, especially vinegar. Finally, when u feel the taste is as desired, add salt accordingly, since soya sauce contains salt already. Add black pepper and stir nicely. -spread these veggies in the wok with the ladle. - Add noodles in two batches. Put the first batch. Stir. Put the remaining batch and stir. Hope u remember how the van guy stirs the noodles. Not like how we stir our Desi subzi because that will break the noodles. - again taste and adjust the flavours, salt etc accordingly. Its done !!!!!
