Choc-Chip Vanilla Protein Pancakes 1 cup flour (I used Red mill all purpose) 1 scoop Alkaline Extreme Vanilla Protein 1/4tsp baking soda (aluminum free) 1/4tsp Celtic sea salt 1tbs ground flax meal 2 tbs water 1 1/4 cup milk (I used almond or Coco quench) 1 tsp apple cider vinegar 1 tbs melted coconut oil 1/4 cup chocolate chips 1. Make the flax egg in bowl. Combine flax meal with the water and set aside. Meanwhile, sit tub of coconut oil in hot water to melt. 2. In another bowl combine the dry ingredients, except the choc-chips. 3. Pour the melted coconut oil into the flax egg mixture and whisk. Now add the milk and vinegar to the mixture. 4. Make a well in the centre of the dry ingredients and add the wet ingredients. Whisk until lumps are almost gone and mixture is combined. 5. Gently fold in the choc-chips. On a hot, lightly greased or non stick pan pour some mixture. Wait for the pancakes to form bubbles that pop before turning over. I didnt grease my pan, I found the coconut oil in the batter was sufficient. Serve with fresh berries and flaked coconut, or mashed or sliced banana.
