Chunky Fruit Oatmeal Cookies Ʃ 1 box (18.25 oz.) cake mix, any flavor Ʃ ½ cup butter (1 stick), melted Ʃ 2 large eggs Ʃ 2 cup oatmeal Ʃ 1 (5-6oz. pkg) dried fruit bites (any flavor) Directions: 1. Heat oven to 375. Set 2 ungreased cookie pans aside. 2. Combine cake mix, melted butter and eggs in a large mixing bowl. Mix with an electric mixer on low speed for 1 minute. Scrape down bowl sides and mix for 1 more minutes at medium speed. Cookie dough wiil be thick. Stir in oatmeal and fruit bites. 3. Drop cookie dough by teaspoonfuls and 2 inches apart on cookie sheets. Bake on middle oven rack for 10-15 minutes or until golden brown. Remove from oven and let cookies set on cookie sheet for 1 minute. Use a metal spatula to remove and place on wire racks to cool completely.
