Constance Chang found fame and fortune by introducing Chinese cuisine to Tokyo in the 1950s and 60s. She operated both buffet and formal sit down restaurants, and had a popular TV show teaching the art of Chinese cooking to Japanese housewives. And, she published cook books, too. She issued a book in the U.S. in 1969, which attempted to explain HOW a Chinese meal is served. The book is hampered, somewhat, by relying entirely on recipes the buyer already knew from take-out places. Which makes it so VERY....1969.
