Cooking is something I struggle with due to health issues, and combined with being Failsafe adds extra challenges. Im also currently attempting to go totally GF which adds an extra problem as well. With some help from a friend this afternoon I adapted a recipe to make a chocolate slice that was gluten, brown sugar and coconut free! NOTE: If sensitive to amines, this recipe wont be for you. I used GF S/R flour instead of S/R Flour, white sugar instead of brown and crushed Rice Bubbles instead of coconut. I expected it to be an absolute flop (given most things I make are, lol) but it was awesome! Heres the recipe in case anyone would like to try. I halved the recipe and made it in a square cake tin as I dont own a slice tray (blush!). The ingredients listed below are the original measurements before halving. 230g melted butter 2C GF S/R Flour 2C White Sugar 2C Crushed Rice Bubbles 1/2C Cocoa Icing: 2 tbsp cocoa 1C Icing Sugar 1 tbsp milk 1 tbsp butter, melted 1. Preheat oven to 170C and line baking tray with greaseproof paper. 2. Mix all dry ingredients in a large bowl and add melted butter. Stir well. 3. Press mixture firmly into tray and bake for 20 mins. 4. Allow base to cool. 5. Sift icing sugar and cocoa and stir in melted butter and milk. 6. Spread over slice and cut into desired portions. TIP: After 20 mins in the oven the base looked too soft so I put it in for another 5 mins. In hindsight, 20 mins was fine as I think 25 mins made the base a bit too crunchy!
