Cooking up a large vegan pot of veggie soup from Morocco, sans eggs and using veggie stock in lieu of a meat stock for the base - with tons of sliced tomatoes. (It resembles shakshukah). Already going on an hour on the stove... My home probably smells very South African with all the spices, so Im hoping this is worth the effort for tomorrows lunch. Ive read they rarely use oils or other unhealthy ingredients in the meals, so this should be an interesting trial. Listening to some times too...
