The differentiation of grass-fed meat and milk products began with the discovery of a group of fatty acids called conjugated linoleic acids (CLAs), which may have human health benefits. Certain CLAs are significantly higher in the meat and milk of animals raised on a pasture diet than when fed grain (Parodi 1994; Pariza 1997; Dhiman et al. 1999). We have also learned that animals raised on pasture accumulate a healthier ratio of Omega 3 to Omega 6 fatty acids and higher levels of vitamins A and E (Clancy 2006). Well-managed pastures provide ecosystem services to society in addition to a sustainable income for livestock and dairy farmers (Paine et al. 1995; Lyons et al. 2000; Kriegl and McNair 2005). Media coverage in prominent venues, such as Time Magazine and The New York Times, suggests that consumer interest in grass-fed products is growing (Burros 2006; Roosevelt 2006). A significant, and as yet, poorly understood feature of grass-fed milk is that the pasture diet appears to contribute to differences in flavor, texture, and color compared to conventional milk, and these characteristics influence the quality and flavor of the products made with it (Bendall 2001; Martin et al. 2005; Rankin 2005; Couvreur et al. 2006) Grass, the Cow, and the Milk She Makes. The term “terroir” was developed in the wine industry to describe the influence of soils and climate on grapes, from which a particular type and brand of wine was made. This concept is being adopted in other areas of the food industry. Terroir is considered the sum total of the local ambiance, the factors that influence flavors and qualities of a food hand crafted in a particular place; it is a concept that is gaining recognition in the food industry and among consumers (Black 2007) “Beyond protecting the environment, a grass-based dairy farm of 100 cows and 100 ha can generate a comfortable living for a family with minimal hired labor (Kriegl and McNair 2005). At moderate milk prices ($15/cwt), such a dairy farm could generate a gross income of $225,000, far more on a land area basis than most other farming enterprises. Grass-based farms generated more than twice the net income per cow than confinement farms during moderate milk price years over 10 years in Wisconsin (Kriegl and McNair 2005)” Cheese from milk of pastured cows with and without grain was creamier and had a natural yellow color from beta-carotene in the fresh grass. Cows’ pastured-with-grain diet produced cheese that was rated highest, and conventional cheese was rated lowest by a consumer taste panel (Rankin 2006). This and other studies have documented differences in milk chemistry between grass-fed and conventional milk (Bendall 2001; Couvreur et al. 2006).
