Crispy Baked Chicken: a healthy alternative to fried chicken. Tell me if you make this. I thought it was pretty good, but my husband is not a great fan of chicken! Ingredients: 1 cut up chicken 2 eggs 1.5 cups whole wheat panko parsley, paprika, black pepper 3/4 Tbsp salt 1 cup flour 1/2 Tbsp salt 1-2 heaping Tbsp honey Preparation: 1. Beat eggs in large bowl. 2. Put panko in another, mix in parsley, paprika, salt and black pepper. 3. Put flour in another bowl 4. Mix salt and honey in small bowl 5. Preheat oven to 375F, lightly grease large oven-proof dish(es) or baking trays. 6. Cover each piece of chicken with salt-honey mix. 7. Prepare each piece by dredging in flour, then dipping in flour and finally, rolling in panko. Place on baking dish or tray. 8. When all pieces are done, place dish in oven and bake for 35-45 minutes, or until juices run clear when pierced with a sharp knife. Be sure to turn pieces halfway into cooking time. Serve with shredded cabbage salad, macncheese and spinach (we had spinach savoury pie).
