DAY 4 with Cakebread Cellars took us to Gourmet Mushroom Farms where our group learned so much about the growing process. Next stop, Bellwether Farms to spend time with some very talented artisan cheese makers. Afterwards a visit with my all-time favorite bakery, Della Fattoria. My dish that evening was inspired by the adventures of our day. I paired a forest mushroom and Point Reyes Blue Cheese Tart, baby arugula tossed in lemon pistachio olive oil, with Cakebread Chardonnay. Point Reyes Farmstead Cheese Gourmet Mushrooms Inc. / Mycopia
