Dads own Apple Stuffing Recipe. (Bob Sloan) To stuff a 16-20 lb bird 3 large tart apples. Such as granny, Macintosh or Maoun Coarsely chopped. 1lb sweet Italian sausage meat crumbled 1/2 stuck butter 1 large onion 1 small fennel, diced 1/2 cup Marsala or Sherry 1chicken bouillon cube 3 cups wheat bread 3 cups white bread (About 5 slices each diced or I have used pretoasted gourmet seasoned stuffing croutons from Safeway) 1/4 cup chopped fresh parsley 1tsp dried thyme Salt and pepper Cook sausage gravel mix in a frying pan, stirring constantly Until browned, about 4-5 min. Transfer meat to colander, let the fat drain off, then transfer to a large bowl. Wipe out fry pan, return to high heat and add butter. When melted, add diced onions, chopped apple and fennel. Cook stirring frequently, until soft, about twelve minutes. Add Marsala or Sherry and bouillon cube and cook until bouillon dissolves and liquid is reduced in 1/2, about three minutes. Transfer to bowl with sausage. Add remaining ingredients(bread cubes, parsley, thyme , salt and pepper.) Let the mixture cool before stuffing the turkey.
