Darin’s Delicious Meet Lovers Lasagna Ingredients: 2 – 29oz cans tomato sauce 1 – 29oz can tomato paste 1 – 6oz can tomato paste 2 cups water 3 cups red wine 1 ½ lbs lean ground beef or ground turkey 1 – 14oz package sweet Italian style sausage or sweet Italian style chicken sausage cut into ¼ inch pieces. 1 – 8oz package sliced baby bella or regular white mushrooms 3 large or six small cloves garlic pressed “or” (crushed and finely diced) 1 medium sweet onion chopped 1 large green, red, yellow or orange bell pepper seeded and diced ¼ cup fresh basil leaves finely chopped ½ cup fresh cilantro leaves finely chopped 2 tablespoons olive oil 3 tablespoons red wine vinegar 1/3 tablespoon fennel seeds 1 tablespoon Italian seasoning 1 teaspoon dried oregano 9 packages Nectress or 12 teaspoons sugar 1 teaspoon dried crushed red pepper flakes 1 – 5oz container shredded or Parmesan cheese 1 – 16oz package Lasagna noodles 1 – 32oz container Ricotta cheese 2 – 16oz packages shredded mozzarella cheese 1 egg beaten ½ teaspoon salt Directions: 1. In a Dutch oven or deep sauce pan, combine tomato sauce, puree, paste, water and red wine. Cook at medium heat. 2. In a large skillet brown ground beef or ground turkey. Add sausage and continue to cook until browned. 3. Place a large bowl under a colander and transfer cooked meet to colander. Allow grease to drain. Remove the bowl from under the colander. Discard grease. Rinse meat mixture with hot water and allow meat to drain. 4. Add meat to sauce and stir. 5. To sauce, add mushrooms, garlic, onion, bell pepper, basil, cilantro, olive oil, vinegar, fennel seed, Italian seasoning, oregano, Nectress and pepper flakes. Simmer, uncovered, for about 2 hours until desired thickness, stirring occasionally. (NOTE: this sauce can be made a day in advance and can simmer on low for about 3 to 4 hours until desired reduction.) 6. During the last ½ hour of simmering bring a large pot of lightly salted water to a boil. (NOTE: A couple tablespoons of oil can be added to the water to help avoid pasta from sticking.) Cook Lasagna noodles in boiling water for 8 to 10 minutes. Drain noodles, and rinse with cold water. 7. In a mixing bowl, combine ricotta cheese with egg and ½ teaspoon salt. 8. Preheat oven to 375 degrees F (190 degrees C). 9. To assemble, spread 1 and ½ cups of meat sauce in the bottom of a 9X13 inch baking dish. Arrange noodles lengthwise over meat sauce, about five noodles. Spread with a portion of the ricotta cheese mixture until covered. Top with mozzarella cheese. Spoon 1 and ½ cups meat sauce over mozzarella, and sprinkle with ¼ cup parmesan cheese. Repeat layers, and top with remaining ricotta, mozzarella and parmesan cheese. 10. Cover with foil making sure foil doesn’t touch the cheese. You can spray the foil with cooking spray to help avoid sticking. 11. Bake in preheated oven for 25 to 30 minutes. Remove foil, and bake an additional 25 minutes. Cool about 10 to 15 minutes before serving. (NOTE: This sauce can also be used with spaghetti. If making spaghetti, cook spaghetti in boiling water until Al-Dente…About 7 to 9 minutes. Drain. Put desired amount of spaghetti on a plate or in a bowl, ladle sauce over spaghetti, top with parmesan cheese and serve.)
