Day 10 - 30-day recipe challenge! SHEPARDESS PIE 1 pound turkey burger 2-3 Portobello mushroom (diced) 1 large onion (diced) 4-6 cloves garlic (minced) 1 bunch Kale 2 carrots (circles) 2 sweet potatoes (peeled and cubed) 2 small russet potatoes (cubed) 2 golden or red potatoes (cubed) Worcestershire sauce 1-2 cups Beef broth Paprika Black Pepper Fresh grated Nutmeg Horseradish (optional) Parmesan/Romano cheese Coconut Oil In large skillet, heat coconut oil - add garlic and onions. When lightly brown add carrots. Add turkey burger and brown. Stir in mushrooms and add Worcestershire sauce and broth (as needed). Allow to cook for a few minutes. (pic two shows how you can scoop the dark webs out of the underside of the portobello mushrooms .. i like to take this out but cant remember why) Strip kale leaves by holding top of stem and pulling down towards fat end of the stem. Rough chop the kale leaves. It will look like a lot but it cooks down. Add to meat mixture along with paprika, black pepper, salt, a few more dashes of Worcestershire sauce and several grates of fresh nutmeg. (nutmeg is great with the dark greens). Stir and keep on low heat, uncovered. Add or cook off moisture so mixture is well wet but not soupy. Boil potatoes together until tender and drain. Add a dash or two of organic milk/half and half and mash. Add 1/4 cup cheese and a scoop or two of grated horseradish (optional on the hot stuff). Place meat/mushroom mixture in casserole dish, cover with mashers and bake at 375° for 30-40 minutes. Serve with green salad of your choice. I used spinach leaves, red pepper strips, cucumber wheels and feta cheese with fresh lime juice. 400-600 calories Serves 6 xo
