Dessicated coconut snacks are a great high fat, rich tasting snack to keep you feel full or tide you over between extended mealtimes on a busy day. These are cheap to make, probably the cheapest high fat snack you can get, but it does require a little effort in making them - but its fun. Place a big bag of fine dessicated coconut in a blender, blend until paste-like / runny consistency (the time this takes depends on what sort of blender you have - it can be anywhere from 5-15 minutes). Add a teaspoon of cocoa powder if you want them to have a chocolate edge. Once runny, spoon into mini ice-trays or funky moulds as shown in these photos and put in the fridge to set (15 minutes). Then remove them and pop them out of their moulds into a container, to store in the cupboard. Perhaps even a good lunch box addition? But please note: they do melt when in the sun.
