Eggless Chocolate Cake. 1 oz butter or margarine 2 oz sugar 2 tablespoons golden syrup 1 level teaspoon bicarbonate of soda 5-7 fluid oz milk 6 oz self-raising flour 1 oz cocoa pinch of salt Chocolate butter icing Cream together the fat, sugar and syrup, and dissolve the soda in the milk. Sift together flour, salt and cocoa. Add flour and milk alternately to the creamed fat mixture-the consistency should be that of a thick batter. Place the mixture in a prepared 8 inch sandwich cake-tin and bake in a fairly hot oven 375-350 deg F Gas 5-4. When cool spread the top of the cake with butter icing. I sometimes put in fruit such as blackcurrants or cherries and fresh cream. It is a moist cake and is one of my favourites!
