Eggplant-zucchini rolls Slice eggplant and zucchini lengthwise. Cut carrots into matchsticks. Coat eggplant and zucchini with olive oil and season with salt and pepper. Toss carrots in oil and season with sage. Spread on a sheet pan and roast in a 350 degree oven for 15 minutes. Remove from oven and let cool until they can be handled. Stack eggplant and zucchini and place carrots crosswise. Roll and place on the sheet pan. Reheat as needed.
