Emma Laverick asks: Just wanted to let cake makers know that Ive just made my first gluten free cake using my usual victoria sponge recipe and Ive used Dove Self Raising flour and stork not butter (great if you have someone who doesnt do dairy either) and it has risen perfectly been a lighter texture and Im delighted with it, so much so, when I launch my tearoom in the Autumn I may make all my cakes with Gluten Free flour.
