Eric and I spend Sundays planning our meals and mass cooking for the week. This allows us to portion our healthy food into containers which are easy to grab when you are always on the go. Plus we dont make bad last minute decisions for lunch when at work because theres always a chicken breast or healthy salad already made. Heres a pic of our spread for this week. Smoked ribs, smoked wings, sweet potato hash (with bacon, pears and apple), bacon already cooked (which is easy to add to a salad, in a scrambled egg, or lettuce wraps), baked fish over chopped Asian salad tossed with Erics homemade paleo sriracha mayo, egg casserole for breakfast each morning, and chicken fajitas (which we normally eat over steamed cauliflower). We also shred a bunch of sweet potatoes to keep in the fridge for breakfast hash browns or an excellent carb source for other meals. We prefer to cook them in coconut oil. The best thing about this is getting to spend quality time together in the kitchen...even taste testing the food AND the cleanup. 😉 You know what they say about The family that cooks together...
