Euryale ferox grows in water, producing bright purple flowers. The plant is cultivated for its seeds in lowland ponds in India, China, and Japan. In India, particularly in the northern (Punjab) and western parts of the country. Euryale ferox seeds are often roasted or fried, which causes them to pop like popcorn. These are then eaten, often with a sprinkling of oil and spices. Nutritional studies have shown that edible parts of the seed contain 12.8% moisture,9.7% proteins, 0.1% fat, 76.9% carbohydrates, 0.5% mineral matter, and 1.45% iron, besides a good portion of sugar. Medicinally, it is also very important to have remedy for several human ailments. The seeds are used for treatment of stomachache, articular pain, seminal loss, diabetes, spleen,and gonorrhea diseases.
