Exciting news here in Half Moon Bay – today we took delivery of a flash new oven for our lunchroom – it turns out our previous model wasn’t big enough to cater for the regular roasts that Cara cooks us for lunch (Cara is a member of our Customs Team). We are also regularly treated to a batch of scones each Wednesday courtesy of our resident Baker Don Malcolm, and biscuits hot from the oven courtesy of Ricky and his protégées. Check out one of our favourite recipes below: Chocolate Chippies Ingredients • 4 oz (112 grams) sugar • 8 oz (225 grams) butter (softened) • ½ tin (or 1 tube) sweetened condensed milk • 12 oz (336 grams) flour • 4 teaspoons baking powder • ½ packet (125 grams) choc chips • ½ teaspoon vanilla Directions Preheat the oven to 180 degrees C. Grease cookie sheets or line with parchment paper. In a large bowl, cream butter, sugar, condensed milk and vanilla until fluffy Sift together flour and baking powder and mix into creamed butter mixture Add chocolate chips and mix in Roll into 1 ½ inch balls and place onto the prepared cookie sheets. Cookies should be about 2 inches apart. (can flatten slightly with a fork) Bake for approx 7 minutes, turn tray and bake for a further 4-5 minutes until lightly browned Once cooked, transfer to wire racks to cool.
