Extremely simple dish with a beautiful orangy feel and a kick of flavour from the garlic n chilli. The raita, delicate tasting with a hint of orange has a character of its own but does not overpower the heavenly flavors of the kababs. For a diet version use low fat curd. Caramelised Orange Chicken Kababs with Orange Raita For Raita 1 cup very thick Curd 1/4 cup Orange Juice 1 tbsp Coriander leaves finely chopped 1/4 tsp Green Chilli Paste 1/2 tsp Chilli flakes Salt to taste Mix all and refrigerate till kababs get ready. For Kababs 2 pieces Chicken Breasts cut to bite size 1 Capsicum cut into 1 inch pieces 1 Red/Yellow Bell Pepper cut into 1 inch pieces 6 Babycorns cut into 1/2 inch long pieces 1 cup Orange juice (you may use the packed ones too but ones without added sugar) 4 cloves Garlic crushed well 4-5 tbsp Curd 1/2 tsp Cumin Powder 1/4 tsp Pepper Powder 1/2 tsp Chilli flakes 2 tbsp Olive oil Salt to taste Mix all well and leave it for 15 mins. In a non stick pan, heat oil. Add the marinated mix and stirfry till the orange juice reduces completely and gets caramelised and sticks to the chicken turning golden brown in colour. Put off flame and let it cool a bit. Meanwhile preheat oven for 10 mins at 200 degree C. Once chicken n veggies cool...fix them in skewers in any order u like and put it in the oven for abour 5-10 mins till its browned enough. Remove, garnish with a squeeze of lemon juice if desired and serve with Orange Raita. Cheers! :-)
