FARRO SALAD Over the weekend I ran into the husband of a childhood friend. We got on the topic of healthy foods and how you can substitute healthy items for non-healthy items. One tip I gave him was to use Farro as a grain instead of white rice, flour, etc. Farro is one of the oldest grains that humans have consumed. It is incredibly healthy for you and is also very versatile. It is actually a type of Barley. It is cooked using the simmering method of cooking. In other words it is simmered in water like rice. Farro can be eaten hot or cold. I like it both ways but in my house I cook it, create a salad and put it in the refrigerator to be eaten over the next few days. I have included a recipe I use at home below. Note that any of the vegetables can be substituted in or out. If you do not like olives then taken them out. If you prefer broccolini to asparagus then it is ok to substitute. The possibilities are endless with this amazing grain! INGREDIENTS ½ cup chopped black or Kalamata Olives ¼ cup capers 2 Large garlic cloves – Minced 3 Tablespoons Balsamic Vinegar 14 oz Farro 6 cups water 1 ½ cups tomatoes – Seeded and diced ½ cup chopped basil Salt and Pepper to Taste Olive Oil DIRECTIONS Bring 6 cups of salted water to a boil. Add the Farro, reduce to simmer, cover and simmer for approximately 20 minutes. The Farro will be cooked when the water is gone. Once cooked transfer the Farro to a large bowl to cool. Add the tomatoes, Basil, olives, capers to the Farro and toss. Add the Garlic, vinegar, salt, pepper and a drizzle of olive oil and toss. This dish is best served at room temperature. ENJOY!
