Family roast...part 2. I started preparing this roast last weekend, but due to some glaring oversight on my part, the entire project had to be aborted. This is the second run, having learned the lessons of last weekend. What we have here is a five pound eye of round roast, marinated in baking sauce for twelve hours. Likewise, we have Great Northern beans soaked for twelve hours to soften. Sear the marinated roast in a Wagner #10 cast iron skillet, and set it on top of the prepared beans...and into the oven it goes, to slow-cook at 250 degrees F all night, and tomorrow morning as well. When the family arrives for dinner tomorrow, it will be cooked to the point where it falls apart.
