#FiAwinterenergizer #week2 #Part-1 Yesterday, in quest of innovation with an ingredient that Ive hardly used, I went little far. I made three items, and hence entire dinner, using Sweet Potato. I made a soup, an appetizer and a main course, sadly couldnt make a dessert. On stating which my husband asked me, was the subjiwala out of sweet potatoes? :-| Anyways, so yesterday I made Sweet potato - walnut soup, minty sweet potato wedges as appetizer and Shakkarkand ke Kofte as main course. So first of all soup: Ingredients: 1 ½ cup Sweet Potato – peeled and cubed 4-5 cups water 1 tbsp ghee 1 stick cinnamon 1 star anise 1 Cup Crushed Walnut 2 spring onions – finely chopped 1 Tbsp green chili paste (Or as per taste) Salt, Black Pepper as per taste Fresh Cream for garnish Method: Add two cups water in a pan and let it simmer. Add cubed sweet potatoes to the pan and let it cook till they are soft. Take the pan off the flame and let it cool down. Add the sweet potatoes into grinder along with the water and make a smooth paste. Now in the same pan, add 1 tbsp ghee. Add Cinnamon stick and star anise to it. Add rest of the water and the sweet potato puree to it. Add spring onion, green chili paste, salt and pepper. Once the mixture starts to boil, low the flame, add crushed walnut and let it simmer till desired consistency. Garnish it with fresh cream and serve hot
