First serious try at porchetta. Basically, its a boneless pork roast which gets butterflied, coated with an herb and garlic mix, rolled up and roasted. My big city friends may find it at good delis and meat counters. My Cadillac friends might find it at Hermanns but who knows? I like it sliced thin with mustard on sandwiches. This particular one had good flavor but came out a little dry. I think it was in the oven about 45 minutes too long. But I cooked some kale in the drippings, sliced the porchetta thin, dunked it in with the kale, and then ate it. Very nice.
