**** For Weekend **** As promised !! (Actually I didn’t promise to anyone , but to get a punch on the post! and some people may think I am a person with cooking as hobby ) ,this week’s Recipe is nothing other than “Dal”. What is “Dal” ? This is not “Dhal Lake of Kashmir” , it can be pronounced “Daaal” as well. Back in my place “Kuthiathode” it is called “Parippu”. Readers and Friends , now please don’t nag me saying, it is different in American English, Indian English, British English, Malayalam , Hindi, Urdu Etc. Coz no cast, creed, region and religion matters for taste. Lets come back to the facts : How many types of “Dal” can we make? ‘n’ number (Those who don’t understand ‘n’ ask some techies , everyday they use ‘n’;’n’ number of times, required or not, just for the punch on the sentence.). Some hifi restaurants ,calls big and different names and variants to market or confuse or attract you. All those are children of same parent which our today’s recipe “Dal” you can refer to the ‘Tips’ for more info. Ingredients 1. Dal (Lentile) nothing but dried pulse – 100 or 150 Grams (Google it , you can find so many types of Dried pulses, red ,black, white, yellow, green, blue Oopps! no Blue I believe ) 2. Ginger – Small piece 3. Garlic – 5 Small portions 4. Green Chili – 2 5. Mustard – 1 Small Spoon 6. Oil -2 Tea spoon 7. Tomato Chopped – 1 8. Salt – for taste (those who are having BP , may god bless you + RIP) 9. Chili Powder-1 Spoon 10. Onion Chopped – 2 Big Spoons 11. Cumin and Turmeric Powder– 1 small pinch 12. Curry leaves 13. Water 1.5 cup (I have seen this ‘Cup’ concept in some recipes, but I am not sure about the measurement , anyways you can pour the water as per wish don’t put more than double of the Pulse quantity) Preparation If you are financially rich then use any vessel as per your convenience , if very economical – middle class person , then use the pressure cooker. Preferably “Prestige” (I am talking to that company , and told them I have big fans following on FB and I can help them on marketing. So I can make more money ). Clean (If you like or if you are making it for you) the ‘1’+13 and Add crushed ‘2’,’3’ Add Sliced (Vertical) ‘4’ and 5 then ‘8’. Keep it on high simmer (Time to learn little bit about the science behind the work of pressure cooker) and don’t forget to put Cookers pressure weight. You can avoid cookers weight , in case you want to make modern art on your kitchen’s ceiling using Pulse. I have tried it, back in Kuthiathode, and seems my Dad didn’t like it, and he rewarded me with unforgettable charge with belt. Let cooker make those “Flirting” (Choooo, Sheeeweeee etc.) noice for 2 times, then remove it from stove. Now place the pan (Frying) on the same stove at low simmer add ‘6’ once it is hot add ‘5’, upon adding ‘5’ some small sound and smoke is expected. If not then there is something wrong ( Possible reason may be oil is not hot). After that add ‘9’,’10’,’11’,’12’ and ’7’ (left over of the above) and steer it well until it turned to brown. Now add this mixture to the cooked lentil on the pressure cooker(some sound and smoke is expected, if that didn’t come then…. Some issues are there, I will not be happy) , boil it and your ‘Dal’ is Ready! Tips You can make different types of ‘Dal’ by just changing the family of Pulse and Masalas , (Just to go to any grocery you will get minimum 4 types of it) take one and just try Now add, few more spices into it and you can name it anything. The base is above, cooked ‘Dal’ . Add some ‘spinach’ while cooking , then it will be Dal Palak , After cooking fry it with little bit of Ghee or Butter till it get to ‘Dark Brown’ then it will be ‘Dal’ Fry. Use black dal and add butter and some fresh cream in it, then it will be ‘Dal’ Makhani. Add little Sambar powder then it will become ‘Dal‘ south Indian. Add coriander leaves then it will become ‘Dal’ North Indian. Add some Cream and Garam Masala (Mixture of all known and unknown spices available in Indian sub-continent) then it will become ‘Dal’ Muglai. Add little Biriyani masala, it will become ‘Dal’ Afghani or Hydrabadi. Add little chicken stock and soya sauce and avoid chili powder, then it will be ‘Dal’ Oriental. Shout out “Balle .. Balle” while cooking it will become ‘Dal’ Punjabi. Say ‘Insha Allah’ while cooking it will become ‘Dal’ Arab Style. Here comes the final shot :-> Do not add anything just cook (6 or 7 whistle on pressure cooker ) the pulse + salt, then it will become ‘Western’ Lentil Soup (Lets name it ‘Dal’ Continental ) a 5 ***** Star Dish (‘Bukhara’ Charges 4 KD).. See the variants!!? I am just giving you the head start, you can make any variants of ‘Dal’ as per available ingredients … after all everything is same ‘Dal’. Only name , smell , taste and price is different. If I don’t get 100+ likes, then I am going to unfriend (Noooppp… Risky for me? ) you all!
