For all you lovers of fish and wine, this is an awesome recipe from the kitchen of "Mark Larson" at the Modern Craft Tasting room in Harrisville! Kiwi Salmon Slowly Caramelize one chopped onion in a skillet. Remove onion and place 12 halved grape Tomatoes in the skillet and turn heat to high. When tomatoes are browned on edges, return onions to the skillet and add 1 cup of kiwi wine. Cook on high heat until most of the moisture is gone. Add a touch of garlic and cumin to taste. Lightly oil skin of Salmon with Olive Oil then place skin down on a large oven proof skillet. Place tomato kiwi reduction on top of Salmon and broil until browned blisters cover about 25% of Salmon. This recipe makes great fish tacos and pairs very nicely with our Kiwi Wine.
