For those of you charged with deviled egg manufacturing this holiday season, a recipe for boiling eggs so that they peel easier than any other method: 1) Buy FRESH cheap eggs -- keep in the refrigerator. Egg temp is important. 2) Fill a pot so that the water will be 1-2 inches above the eggs, and bring to a rolling boil. 3) Once boiling gets serious, bring eggs out of refrigerator and place the eggs onto serving spoon or ladle -- gently lay them at the bottom of the molten lava water. 4) Set the timer to 13 minutes and wait. 5) *Ding* time to move the pot to the sink where youll start pouring cold water into the pot directly for ONE MINUTE (60 seconds - set timer if necessary) 6) While the eggs were boiling, you should have been filling up a mixing bowl with ice. 7) *Ding* Turn off running water, dump out some of that water, dump in all that ice (cant get enough ice in there, but it should be ice water, not ice. This is an ice bath.) 8) Commence ice bath for 15 minutes (SET TIMER) 9) *Ding* reach your hand into the arctic cold pan, and pull out your first egg. Tap on cutting board or counter top, and roll forward one full rotation. 10) The shells will most often jump off the egg practically, might need SOME physical peeling, but you are sure to not be picking off tiny little pieces of shell the whole time.
