Frankly, I did not know there were so many vegatables I have never considered eating. Three nights ago it was kale with bacon(who would have thought bacon was that transformational ingredient that can make or break a veggie). Tonight is was turnips that turned up in the supper line having been roasted in the oven. Although I did my duty, (ate my turnips) they wont be appearing again on a table I put my feet under(prayerfully). I have relented on my previous arms length antipathy toward carrots. If one pares down the list of acceptable ingredients for a meal (not on this diet!) one revisits the mental bucket list of foods that will never pass ones fat lips. Carrots, for the moment, have been moved over to the eat and be grateful/happy list. I blame its placement on the dont eat list on luncheons attached to meeting upon meeting I attended before moving to Livingston. It was paired with the chicken breast buried beneath some sauce/gravy. Apparently carrots are a favorite veggie of the chef because they are colorful, have eye appeal, and are so versatile for salads, entres, and even buried in a cake--desert. The fact that candy corn is similar has never dictated its use in salads, entres or desert unless it is a gathering of children who need a sugar rush before being pushed out the door to their homes. When that happens one can pretty well bet the hostess will be scratched off the bucket list of acceptable childrens hostesses. The calendar is slowly advancing toward that blessed day of liberation. And all this 30 Day Challenge will be rewarded with a T-shirt which should look pretty smart on my aging, slightly diminished body. But more importantly, I will have that deep, deep sense of satisfaction when one has actually sharpened ones self discipline and not used his fork to dig his own grave.
