Fretta Recipe 1 lb cauliflower steamed lightly then sauteed 1 medium onion 2 green pepper 2 cups broccoli 1 chicken or turkey sausage 1 cup of mushrooms 1/2 cup tomatoes 6 eggs, beaten salt and pepper You need 2 saute pans. The second one needs to be the biggest pan you own. 1. In one pan lightly sauteed the boiled cauliflower. In the second, saute the onion, pepper, mushroom and broccoli. When the cauliflower is done, add them to the onion/pepper/broccoli pan and keep covered over very low heat. 2. Add all ingredients into the big pan. 3. Turn the heat way up with the cover on and let everything get really hot for a minute. 4. Add the egg, and turn once or twice to ensure even cooking. Frettas are traditionally served with cheese on top and hot sauce on the side. I like a little mild salsa with mine and goat cheese because its healthier. Got leftovers, put them in a wrap and freeze to enjoy when you need a quick breakfast.
