Friday night fridge clean-out - what to do with a giant cauliflower, kale (darn caterpillars are enjoying it too!) and korma paste... Havent convinced the kids to eat this one yet - but this made seriously yummy cauliflower base, Indian flavoured pizzas! Blitzed the cauli in the food processor (but you could just as easily grate it), zapped it in the microwave for 5 minutes, then added eggs, salt and pepper, a little grated cheese, and some cornmeal flour (have tried leaving out the flour but it can end up too wet - the half cup of flour means it holds together better when cooked). Any flour would do - wheat, buckwheat, coconut etc. Im just using up some cornmeal. Shape it into your base - I did one in a cast iron frying pan on the stove top, and one on a pizza stone in the oven (both these came from one large cauli), cook until firm, then add toppings and finish off (I put the cast iron pan pizza into the oven to sizzle the cheese). For both of these I softened off some peppers and courgettes in a little coconut oil and added lots of fresh coriander. I tossed the kale in some oil and lemon juice, added salt and pepper and cooked the kale chips in the oven with the bases, then added them to the pizza topping under the cheese. Used the korma paste as the pizza sauce, and done - vegetarian, gluten free Indian pizza! Also makes awesome leftovers :)
