Friday’s Fare Family recipes that have been passed down through the generations are often changed just a little. Aunt Margaret shared this recipe and was heard to say that it tasted better made with bear grease. Oat Cakes 3 cups flour 1 cup sugar 2 tsp salt 1 tsp baking soda 1 ½ cups lard ~ must be lard ~ or according to family notes, bear grease! 3 cups quick oatmeal ½ - ¾ cup water Mix flour sugar and salt together. Cut lard into 1” pieces. Add to flour mixture. Mix together to a pastry consistency. Add oatmeal. Mix well. Add water starting with ½ cup. On a well floured board, roll dough to 1/8” thick and cut into squares with a knife or use a cookie cutter of your choice. Bake on an un-greased cookie sheet at 350 F for 10 minutes. The bottoms will brown slightly but the tops will remain whitish when they are done. This recipe makes about 8 dozen. They freeze well. Tips - If mixture is dry and not holding together, add more water 1 Tbsp at a time. - Baking time may vary. For soft and chewy, bake 8 minutes and test. Baking longer than 10 minutes will make them crunchy. - Serve as is or with butter, jam, peanut butter, cheese whiz or a slice hard cheese. - Makes excellent snacks anytime and if you are headed out for a day spent in the saddle or hiking take some along.
