Fromage Friday: Lincolnshire Poacher Our ‘Cheese of the Week’ is one of our personal favourites, the distinctive Lincolnshire Poacher. This award-winning cheese is produced on a dairy farm found on the eastern edge of the beautiful Lincolnshire Wolds. The use of freshly produced and unpasteurised milk from the farm’s dairy herds is the basis for the distinctive characteristics of the cheese. The cheese sits somewhere between West Country Cheddar and continental hard mountains cheeses such as Comte, but has several key differences to give it its own unique flavour and texture. It is matured for 14 to 24 months and, although the taste varies with the seasons, it usually has a distinctive fruity and nutty taste with a clean, sweet finish. To make sure the milk is of the highest quality, the cows are treated like royalty – they even have their own ‘happy cow’ brushes so they can give themselves a really good scratch!
