Fun fact about me: I started my professional career as a dishwasher in a Greek restaurant at age 15. I had dreams that my family could not fulfill at the time: I wanted to be free and ride a motorbike, go wherever I want. So my mum said: that liberty of yours, deserve it, go and set yourself free in the way you want! Boy, was it hard scraping those dishes! But all the while I was stuck in that hot kitchen 4 nights a week, I smiled. I knew that this labor was directed towards a goal, something I knew would make me very happy. For seven years - catering, hospitality, hotellerie whatever you want to call it - was my meal ticket, the means to finance my studies and the best school I could ever wish for: hard, so hard! People management, team building, communication, organization, leadership, customer service, negotiation, event management, budgeting, forecasting, stock management, handling crisis... all those are the things that you learn when working the floor. I am not saying that I excel in all or any of these, all I am saying is that people in this trade deserve my respect and should not be looked down upon. You dont know their story and you never know what the person serving you in this or that restaurant is going to become one day.
