Gerry Slater says: I dont know about Redzepi or Patterson. Never had their cuisine. But I do know that there is zero evidence that Alice Waters is a Chef. I also know she is a genius at self-promoting. I also know that if not for Jeremiah Tower, Chez Panisse would be just another hash house in Berkeley. I ate there once in 1971 when Victoria Wise was the Chef. The meal was very forgettable. Between 1972 and 1978 I ate there a dozen times. Jeremiah made the menu, he cooked the food, and was responsible for the concept of locally sourced, fresh, simplified cuisine that somehow morphed into California Cuisine. To call Ms Waters one of the worlds 100 most influential people makes me throw up in my mouth. As long as I am drawing a breath, I will not let Chef Tower be relegated to a footnote in this story, and I encourage all my other foodie friends to do likewise. If not now, then eventually, he will be recognized as one of the best chefs of the last half of the 20th Century.
